📝 Ingredients
400g (3 cups) frozen peas
3 eggs
120g (1 cup) all-purpose/plain flour
1 tsp baking powder
1 spring onion (scallion), chopped
55g (⅓ cup) crumbled feta cheese
2 tbsp chopped parsley
3 tbsp olive oil
👩🍳 Instructions
Boil peas for 2-3 minutes, drain and rinse under cold water.
Blend eggs, spring onion, and half of the peas until combined.
In a bowl, mix the blended pea mixture with remaining peas, feta, parsley, flour, and baking powder.
In a skillet, heat 1 tbsp oil over medium heat. Scoop and flatten tablespoons of the mixture, frying each side for 2-3 minutes until golden and crispy.
