Ingredients 📝

  • 2 tablespoons butter

  • 1 small yellow onion, chopped

  • 1 garlic clove, minced

  • 2 large eggs, beaten

  • 1 cup ricotta cheese

  • 1/2 cup mozzarella cheese, shredded

  • 1/2 cup parmesan cheese, grated

  • 1 (10 ounce) package frozen chopped spinach, defrosted and well-drained

  • 1/4 teaspoon kosher salt

Instructions 👩‍🍳

  1. Preheat oven to 350 degrees.

  2. Melt butter in a sauté pan over medium heat and cook onions until tender, about 4 minutes. Add garlic and cook for one more minute.

  3. In a bowl, whisk eggs and stir in ricotta, mozzarella, and parmesan. Add spinach, salt, and onion-garlic mixture.

  4. Grease mini muffin cups and fill with the mixture.

  5. Bake for 20-25 minutes until set and golden on top. Use a knife to release the bites if necessary.
