📝 Ingredients
2 tablespoons butter
1 small yellow onion, chopped
1 garlic clove, minced
2 large eggs, beaten
1 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
1 (10 ounce) package frozen chopped spinach, defrosted and well-drained
1/4 teaspoon kosher salt
👩🍳 Instructions
Preheat oven to 350 degrees.
Melt butter in a sauté pan over medium heat and cook onions until tender, about 4 minutes. Add garlic and cook for one more minute.
In a bowl, whisk eggs and stir in ricotta, mozzarella, and parmesan. Add spinach, salt, and onion-garlic mixture.
Grease mini muffin cups and fill with the mixture.
Bake for 20-25 minutes until set and golden on top. Use a knife to release the bites if necessary.
