Berry Baked Oatmeal 🍓

If you can stir a bowl and turn on the oven, you can make this. Then it bakes while you pack lunches, find missing shoes, or drink your coffee while it’s still hot.

It comes out warm and chewy like an oat muffin, loaded with juicy berries and a little crunch on top.

📝 Ingredients

  • 2 cups rolled oats

  • 1 teaspoon baking powder

  • 1 1/2 teaspoons cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup sliced almonds

  • 1/4 cup pure maple syrup

  • 2 cups milk

  • 2 large eggs

  • 1 tablespoon unsalted butter, melted

  • 2 teaspoons vanilla extract

  • 2 cups frozen mixed berries

👩‍🍳 Instructions

  1. Heat oven to 375°F. Spray an 8–9 inch square baking dish with cooking spray.

  2. In a large bowl, mix oats, baking powder, cinnamon, salt, and half the almonds.

  3. In another bowl, whisk maple syrup, milk, eggs, melted butter, and vanilla.

  4. Pour wet into dry and stir to combine. Gently stir in the frozen berries.

  5. Pour into the baking dish. Top with remaining almonds (and extra berries if you want).

  6. Bake 35–45 minutes, until golden and set.

  7. Cool a few minutes, slice, and serve (extra maple syrup and/or vanilla Greek yogurt is optional).

📌 Note

  • Make-ahead: assemble, cover, and refrigerate overnight; bake in the morning.

  • Egg-free: you can skip the eggs (it’ll be softer); adding 1 tablespoon flax meal helps it set.

  • Store: refrigerate 3–4 days or freeze individual portions up to 3 months.

If your kids (or pets) won’t leave plants alone, hang one up high to save space and sanity.

Pick a ceiling spot with the light it needs and not over a walkway.

  1. Weigh the freshly watered pot, then buy a hook rated higher.

  2. Use a stud finder to hit solid wood, or use a folding anchor for hollow drywall.

  3. Drill the hole size on the package, then twist the hook in snug.

  4. Hang the basket and add an S-hook or chain to lower it.

Now you get trailing green vibes without anything to knock over.
