Preheat the oven to 425°F and prepare a muffin tin with liners or grease.
Mix flour, baking soda, baking powder, cinnamon, and salt in a bowl.
In another bowl, whisk together eggs, maple syrup, coconut oil, applesauce, and vanilla.
Combine the wet and dry ingredients, then fold in the grated apples and walnuts.
Fill muffin tins to the top and bake at 425°F for 5 minutes. Then, reduce the temperature to 350°F and bake for another 12-18 minutes.
Check for doneness with a toothpick and let cool before serving.
