  • 2¼ cups rolled oats

  • 2 cups ripe bananas, sliced

  • 1 cup grated zucchini, squeezed dry

  • ½ cup shredded unsweetened coconut

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • ¼ tsp salt

  • 3 eggs

  • ¼ cup melted unsalted butter (or plain yogurt)

  • ¼ cup maple syrup

  • 1 tsp vanilla extract
