📝 Ingredients
Seasoning:
½ tsp onion powder
¼ tsp garlic powder
1 tbsp sweet smoked paprika
1½ tsp ground cumin
1 tsp dried oregano
1 tsp salt (optional for babies/toddlers)
Fajitas:
500g (1lb) chicken breasts, cut into strips
3 bell peppers (red, yellow, green), de-seeded and sliced
2 onions, halved and cut into wedges
2 tbsp olive oil
To Serve:
1 lime
8-10 small flour tortillas
Optional toppings: guacamole, sour cream, salsa, grated cheese
👩🍳 Instructions
Preheat oven to 200°C (400°F).
Mix all spices together in a bowl.
Place chicken and vegetables on a large baking sheet, drizzle with oil, and sprinkle with seasoning. Toss to coat evenly.
Bake for 20-25 minutes until chicken is cooked and veggies are tender.
Warm tortillas in the oven wrapped in foil for the last 8 minutes.
Squeeze lime juice over the chicken and veggies, then serve on tortillas with your favorite toppings.
