📝 Ingredients

  • Seasoning:

    • ½ tsp onion powder

    • ¼ tsp garlic powder

    • 1 tbsp sweet smoked paprika

    • 1½ tsp ground cumin

    • 1 tsp dried oregano

    • 1 tsp salt (optional for babies/toddlers)

  • Fajitas:

    • 500g (1lb) chicken breasts, cut into strips

    • 3 bell peppers (red, yellow, green), de-seeded and sliced

    • 2 onions, halved and cut into wedges

    • 2 tbsp olive oil

  • To Serve:

    • 1 lime

    • 8-10 small flour tortillas

    • Optional toppings: guacamole, sour cream, salsa, grated cheese

👩‍🍳 Instructions

  1. Preheat oven to 200°C (400°F).

  2. Mix all spices together in a bowl.

  3. Place chicken and vegetables on a large baking sheet, drizzle with oil, and sprinkle with seasoning. Toss to coat evenly.

  4. Bake for 20-25 minutes until chicken is cooked and veggies are tender.

  5. Warm tortillas in the oven wrapped in foil for the last 8 minutes.

  6. Squeeze lime juice over the chicken and veggies, then serve on tortillas with your favorite toppings.
