Pumpkin Stuffing for Thanksgiving🎃🍞

📝 Ingredients

  • 4 tablespoon olive oil

  • 1/4 cup unsalted butter

  • 8 whole shiitake mushrooms

  • 2 cups chopped onion

  • 15 ounces canned pumpkin

  • 2 cups vegetable broth

  • 8 cups bread cubes or stuffing cubes

👩‍🍳 Instructions

  1. Preheat oven to 400 degrees and grease a 9X13 inch pan.

  2. Over medium heat, melt olive oil and butter in a large pan. Add mushrooms and cook for 3 minutes.

  3. Toss in onions and celery, cooking for 10 minutes or until veggies are soft.

  4. Stir in rosemary and sage; season with salt and pepper. Cook for an additional minute.

  5. Reduce heat to low. Add pumpkin and vegetable broth, stirring for another 5 minutes.

  6. In your casserole dish, place bread cubes and pour over the veggie/pumpkin mix. Toss gently to coat and bake for 20 minutes. For a dryer stuffing, extend baking time.
