In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
In another bowl, mix applesauce, buttermilk, honey, egg, and vanilla.
Combine wet and dry ingredients, fold in chopped apples.
Fill muffin cups ¾ full and bake for 20 minutes or until a toothpick comes out clean.
