As the fun-filled summer break winds down and the school bell starts to ring again, I've stumbled upon a brilliant, lunchbox-friendly recipe that'll surely put a delighted grin on your little one's faces.

Say hello to these incredibly adaptable, Veggie-Packed Savory Muffins!

Ingredients 📝

  • 1 medium Zucchini (250g), grated

  • 1 medium Carrot (120g), grated

  • ¼ cup Frozen Peas (30g)

  • ¼ cup Frozen Corn (30g)

  • 1 cup Cheddar Cheese (125g), grated

  • ½ Cup Milk (125ml)

  • ¼ cup Plain Greek Yoghurt

  • ¼ cup Olive Oil

  • 2 Eggs

  • 2 cups Plain Wholemeal Flour (250g) *See Note

  • 3 tsp Baking Powder

Instructions 👩‍🍳

  1. Prep: Preheat your oven to 180C / 350F. Using a clean dish towel, squeeze out the juice from the grated zucchini and carrot (don't throw the juice away, use it for smoothies or sauces!)

  2. Mix Veggies: In a large mixing bowl, combine zucchini, carrots, peas, sweetcorn, cheese, milk, yogurt, olive oil, and eggs.

  3. Combine Dry Ingredients: Mix the flour and baking powder together and then slowly add to the wet ingredients. Remember, over stirring is the enemy - aim for a lumpy, messy-looking mixture.

  4. Bake: Grease a 12 hole muffin tray and evenly spoon in the mixture. Bake for 20-25 mins, but keep an eye on them - we want perfectly cooked, not dry muffins!

Storing Savory Muffins 

The key to long-lasting yumminess is all in the storing.

Let your muffins cool fully on a wire rack before storing, this prevents them from turning into a soggy disappointment.

For the best flavor, individually wrap the muffins and pop them in the freezer - they can last 2-3 months.

If you're ready for a savory treat, just reheat them at 170C / 350F until warm, or thaw and microwave them.

You can store them at room temperature, but keep in mind the texture might change in humid weather.
