These Roasted Parsnips are a wonderful addition to any meal, offering a sweet, nutty flavor that's sure to win over your little ones. 🍯

📝 Ingredients
900g (2 lb) Parsnips
2 tbsp Olive Oil
1 tbsp Freshly Chopped Rosemary (optional, or see note for alternatives)
👩🍳 Instructions
Preheat the oven to 210C (400F).
Peel the parsnips, chop off the tops, and trim the ends.
Slice into large matchsticks, trying to keep the size consistent.
In a large mixing bowl, toss the parsnips in olive oil. Add rosemary if using and toss again.
Spread the parsnips over two baking trays in a single layer, ensuring they are not touching.
Bake for about 20 mins until they start to brown, remove from oven, flip, and then bake for a further 10-15 mins until lightly brown and tender.
Season to taste (avoid salt if serving to a baby).

If your child isn't a fan of rosemary, try using freshly chopped thyme, a little sumac, smoked paprika, or cinnamon. You can also mix in some grated parmesan or grate a little lemon or orange zest once out of the oven.
Keep a close eye on the parsnips towards the end of cooking to prevent them from burning.
