1/3 cup melted coconut oil
1 teaspoon vanilla extract
1 1/2 cups grated zucchini
1/2 cup dry oats
👩🍳 Instructions
Preheat the oven to 350 degrees F and grease a 12-cup muffin tin.
Combine flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
In another bowl, mix the egg, syrup, milk, oil, and vanilla.
Add the wet ingredients to the dry, stir in the zucchini and oats.
Divide batter among muffin cups and bake for 16-20 minutes.
