🥗 BBQ Chicken Salad

This BBQ Chicken Salad is smoky, crunchy, creamy, and fresh all in one big bowl.
It is hearty enough for dinner, but still feels light and summery, which is basically mom magic.

📝 Ingredients
BBQ Chicken
1 pound boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon paprika
4 cups cool water
1 1/2 tablespoons fine sea salt
1/2 cup BBQ sauce
Salad
6 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1 medium avocado, sliced
1 cup sweet corn kernels, drained
1 cup canned black beans, rinsed and drained
1/4 cup red onion, diced
1/2 cup Monterey Jack cheese, shredded
Tortilla chips, for serving
Dressing
1/4 cup ranch dressing
2 tablespoons BBQ sauce
👩🍳 Instructions
Whisk water and sea salt in a large bowl. Add chicken, cover, and refrigerate for 30 minutes.
Heat grill to medium. Remove chicken from brine, pat dry, coat with olive oil, and season with paprika.
Grill chicken for 5 to 6 minutes. Flip, baste with BBQ sauce, cover, and cook until it reaches 165°F.
Brush with more BBQ sauce, cover, and let rest for 5 to 10 minutes. Slice.
Add romaine, tomatoes, avocado, corn, black beans, red onion, and cheese to a large bowl.
Top with sliced BBQ chicken.
Whisk ranch and BBQ sauce together. Drizzle over salad or serve on the side.
Serve with tortilla chips.
📌 Note
For picky eaters, keep the toppings separate and let everyone build their own bowl.
It also makes a great wrap the next day, assuming there are leftovers.
