Quick Salmon Cakes! 🐟🍴

📝 Ingredients
18 oz canned salmon (boneless, skinless)
¼ cup fresh parsley, minced
1 tbsp capers, minced
½ tsp each of Old Bay seasoning, onion powder, and kosher salt
¾ cup panko or coarse breadcrumbs (gluten-free options work too)
2 tbsp Dijon mustard
2 tbsp mayonnaise
1 egg
2 tbsp olive oil (for cooking)
Optional: Tartar or remoulade sauce for serving

👩🍳 Instructions
Drain and shred the salmon with a fork in a medium bowl.
Mix in parsley, capers, seasonings, panko, mustard, mayo, and egg until well combined.
Form into 8 patties, about ½ inch thick. Refrigerate for 15 minutes to firm up.
Heat olive oil in a skillet over medium-high heat. Cook patties for 3-5 minutes on each side, until lightly browned.
Serve with tartar or remoulade sauce.
