1 tablespoon butter
½ onion, finely chopped
½ red bell pepper, finely chopped
80g (1 ½ packed cups) baby spinach, chopped
100g (1 cup) cheddar cheese, grated
5 eggs
300ml (1 ¼ cups) pouring cream
👩🍳 Instructions
Preheat the oven to 180°C (350°F).
Sauté onion, bell pepper, and spinach in butter.
Whisk eggs and cream, then stir in cheese.
Grease a 12-hole muffin tray.
Distribute the vegetable mixture into each muffin section.
Pour the egg mixture over the veggies.
Bake for 25 minutes until set and golden.
