1 medium zucchini, grated (210g)
1 medium carrot, grated (110g)
¼ cup frozen peas (30g)
¼ cup frozen corn (30g)
1⅓ cup cheddar cheese, grated (125g)
½ cup milk (125ml)
¼ cup plain Greek yogurt (60g)
¼ cup olive oil (60ml)
2 eggs
3 tbsp chopped parsley
2 cups plain wholemeal flour (250g)
2 tsp baking powder
½ tsp salt (omit for babies)
👩🍳 Instructions
Preheat oven to 180°C/160°C (fan)/350°F.
Squeeze excess liquid from grated zucchini and carrot using a clean dish towel.
In a large bowl, mix zucchini, carrot, peas, corn, cheese, milk, yogurt, olive oil, eggs, and parsley.
Combine flour and baking powder, then fold into wet ingredients until just combined.
Grease a 12-hole muffin tray and divide the batter equally.
Bake for 20-25 minutes until golden brown.
