“When it was just my husband and I any holiday would do. We loved traveling and being spontaneous. But with 7 month and a 2 year old. Its way too much to lug around and especially with a fussy eater you carry more than you need for those just in case moments. At home we have everything they are comfy and there are dedicated safe zones and you can actually relax and day trips out are a must. One day we will get back to the adventure but for now we are happy staycating!”

1 pound loaf of bread (brioche, French, or sourdough)
7 large eggs
2 cups milk
1/4 cup brown sugar
1 tablespoon vanilla extract
2 teaspoons cinnamon
1/4 teaspoon salt
Topping:
1/4 cup flour
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter
2 medium bananas
👩🍳 Instructions
Preheat the oven to 350°F and grease a 9x13 inch pan.
Cube the bread and place it in a large bowl.
Whisk eggs, milk, brown sugar, vanilla, cinnamon, and salt. Pour over the bread cubes, coating evenly. Transfer to the baking dish.
For the topping, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly and sprinkle over the casserole.
Bake for 30-40 minutes until browned and cooked through.
Serve warm with banana slices and maple syrup.
