📝 Ingredients
2 cups rolled oats
1/4 cup honey
1/4 cup peanut butter (or Sunbutter for a nut-free option)
1/4 cup whole wheat flour (or gluten-free flour blend)
1/4 cup milk (dairy or nondairy)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
2/3 cup all-fruit jam
👩🍳 Instructions
Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
Blitz the oats in a food processor to make a coarse flour.
Warm honey and peanut butter in a bowl in the microwave, then add oats and other ingredients, except jam.
Set aside ¾ cup of the batter. Press the remaining batter into the pan.
Spread jam over the base. Crumble the reserved dough on top and press down slightly.
Bake for 22-24 minutes, then cool completely in the pan before slicing into bars.
