Ingredients 📝

  • 2 cups rolled oats

  • 1 teaspoon baking powder

  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1/2 cup unsweetened applesauce

  • 1/4 cup pure maple syrup

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 3 small apples, diced (about 2 1/2 cups)

Optional Topping

  • 1/4 cup chopped pecans

  • 1 tablespoon brown sugar

Instructions 👩‍🍳

  1. Preheat oven to 350°F and prepare an 8x8 inch baking dish.

  2. Mix oats, baking powder, cinnamon, nutmeg, ginger, and salt in a large bowl.

  3. In another bowl, whisk milk, applesauce, maple syrup, eggs, and vanilla.

  4. Combine wet and dry ingredients. Layer diced apples in the baking dish, pour oatmeal mixture over, and top with pecans and brown sugar if using.

  5. Bake for 35-40 minutes until set and golden. Let cool slightly before serving.
