Blueberry Baked Oatmeal 🥣🫐

Today, we're ditching the hustle of morning stovetop stirring for a breakfast recipe that'll have your little ones beaming.
It's all about a make-ahead, belly-filling, family-friendly delight - Blueberry Baked Oatmeal.
📝 Ingredients
1 teaspoon coconut oil
2 medium eggs
5 ounces canned coconut milk
⅓ cup honey (warmed slightly)
1 teaspoon vanilla extract
2 cups water
1 cup steel-cut oats
¼ cup shredded unsweetened coconut
¼ teaspoon salt
1 cup blueberries
Coconut not your thing? No worries, butter can stand in for the oil, regular milk can replace coconut milk, and simply add more oats instead of shredded coconut. Likewise, feel free to use rolled oats instead of steel-cut ones.
👩🍳 Instructions
The Night Before:
Generously grease a 3-quart casserole or 9-inch square baking dish with coconut oil.
Whisk together the eggs, coconut milk, honey, and vanilla until smooth. Stir in the 2 cups of water, steel-cut oats, and salt.
Pour this mix into your dish, gently press in those blueberries on top, and cover up. Pop it in the fridge overnight for some sweet dreams.

In the Morning:
4. Preheat your oven to 350°F. Uncover the oatmeal and bake for 35—40 minutes or until it's set and calling your name in the middle.
Drizzle with some extra honey, sprinkle with coconut, and serve hot. Maybe add a little extra milk if you're feeling it!
📌 Note
The leftovers (if any!) are great for up to 5 days in the fridge.
Reheat them as needed or just enjoy them cold. Honey can be swapped out for maple syrup if you prefer.
Fresh or frozen blueberries both work like a charm.
You can use canned coconut milk for an extra punch of flavor, or swap in regular milk or another non-dairy milk if that's more your jam.
