Mixed-Fruit Juices: A Toxic Metal Surprise?

No need for panic, but this juicy tidbit might pique your curiosity.

A Tulane University study sampled 60 common beverages, including your kiddos' favorites: juices and plant-based milks.

Their findings?

Five out of the bunch exceeded federal drinking water standards for toxic metals. While lead turned up in 93% of samples, it mostly hung back below concerning levels.

However, arsenic, cadmium, and others got a bit rowdy in some mixed-fruit juices and plant milks.

Not ideal playmates for our little ones, considering their nasty reputation for causing organ damage and cognitive harm.

Bye-bye yeast, hello Greek yogurt! 🎉

Ingredients 📝

  • 1 cup self-rising flour (or 1 cup all-purpose flour and 1 teaspoon baking powder)

  • ½ cup plain Greek yogurt (Full fat! I love Stonyfield for its mild flavor and perfect consistency)

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • For toppings: ⅓ cup pizza sauce, 1 cup shredded mozzarella, and assorted toppings of your choice

Instructions 👩‍🍳

  1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.

  2. In a medium-sized bowl, add 1 cup of self-rising flour (or 1 cup all-purpose flour and 1 teaspoon baking powder), ½ cup of full-fat Greek yogurt, 1 tablespoon of olive oil, and ½ teaspoon of salt. Start mixing these ingredients together with a spoon.

  3. When the dough starts coming together but gets a bit tough to handle with a spoon, it's time to get your hands in there! Knead the dough lightly for about 1 minute to make it smooth.

  4. Now, let's shape the pizza! You can either cut the dough into two pieces for personal pizzas or leave it whole for a larger pizza. Using your hands or a floured rolling pin, spread or roll out the dough to about ½ inch thick.

  5. Time to decorate! Spread the pizza sauce, sprinkle cheese, and add any desired toppings on your pizza dough.

  6. Slide that masterpiece into your preheated oven and bake for 12-14 minutes. You'll know it's done when the cheese and the edges of the crust are golden brown.

📌 Note:

Store any leftovers (though I doubt you'll have any!) in an airtight container in the fridge for up to 5 days. You can even freeze your pizza for up to 6 months.

Preparing for a busy day? Make the dough ahead, store it in a baggie in the fridge, and let it sit at room temp for 30 minutes before you roll it out.

Here's a fun idea: trade in the traditional pizza sauce for some pesto. Spinach Pesto or Kale Pesto work wonderfully.
