Ingredients 📝
340g (1⅓ cup) Baked sweet potato, peeled and mashed
80g (⅔ cup) Oat Flour (Oats blitzed in processor until flour consistency)
1 egg
1 tablespoon Olive Oil
Instructions 👩🍳
Preheat oven to 200°C (400°F) and line a baking tray with baking paper.
In a large mixing bowl, mix all the ingredients together until combined (the mixture should be the consistency of a thick batter).
Form small mini pizzas approximately 0.5cm thick (or one large pizza if preferred) on the prepared baking tray.
Bake for 20-25 mins (mini pizzas) or slightly longer for a larger pizza base.
Top with yogurt and berries for breakfast, fill two rounds with your favorite sandwich filling, or top with traditional pizza toppings and bake for an additional 5-10 mins.
