“The struggle to read to my busy 15 month old boy is real. He never seems to want to stay still so sitting and read with his out of the picture but recently we moved a lot of his book out of his room and into his play area. This has worked wonders on our reading time. Instead of trying to force him to sit still for story time now he brings me books as he is playing and I read them to him as he wonders around doing all the things. Although he might not be engaging completely with the books he has developed a new interest in them and is still learning from hearing the words spoken to him. Reading looks different for everyone!”

Baked Apple Slices 🍎🍦

Ready for a divine dessert that's bound to become an apple of your eye (pun intended) and makes your house smell like a slice of heaven?

It takes just 35 minutes, and I promise, your little munchkins won't stop at one serving!

📝 Ingredients

  • 3 apples (cored, cut into ¼ inch slices)

  • 1 tablespoon unsalted butter (use coconut oil for our vegan queens!)

  • 2 tablespoons honey or maple syrup (you choose!)

  • 1 tablespoon cornstarch (or arrowroot powder)

  • 1 teaspoon ground cinnamon

  • ⅛ teaspoon ground cloves

  • ⅛ teaspoon salt (just a pinch!)

  • 1 tablespoon fresh apple juice, whiskey (moms, you earned it!), or water

  • Vanilla ice cream (optional, but highly recommended for serving!)

👩‍🍳 Instructions

  1. Decide on the big question: To peel or not to peel those apples? (I say keep 'em on, but your call!)

  2. Warm up that oven to 350°F (180°C).

  3. Slice up those apples nice and thin - we're talking ¼ inch slices.

  4. In a warm pan, melt the butter, toss in the apple slices, and give them a nice sprinkle of spices, cornstarch, honey, and maybe a splash of whiskey (wink!).

  5. Ensure those apples are coated well, then transfer them to your fancy ceramic baking dish.

  6. Bake for 30 golden minutes, or until those apples are just right - tender but holding their shape.

  7. Serve warm and let that vanilla ice cream melt over the slices. A little whipped cream or custard won't hurt either!
