Pumpkin Stuffing for Thanksgiving🎃🍞

Moms, ever thought of a pumpkin twist to the classic Thanksgiving stuffing?
This savory treat is not only delightful but is also kid-friendly, offering a healthy and delicious alternative.
Let's dive into this unique stuffing, perfect for your Thanksgiving table!
📝 Ingredients
4 tablespoon olive oil
1/4 cup unsalted butter
8 whole shiitake mushrooms
2 cups chopped onion
5 stalks celery
2 tablespoons fresh rosemary
1 tablespoon sage leaves
15 ounces canned pumpkin
2 cups vegetable broth
8 cups bread cubes or stuffing cubes
👩🍳 Instructions
Preheat oven to 400 degrees and grease a 9X13 inch pan.
Over medium heat, melt olive oil and butter in a large pan. Add mushrooms and cook for 3 minutes.
Toss in onions and celery, cooking for 10 minutes or until veggies are soft.
Stir in rosemary and sage; season with salt and pepper. Cook for an additional minute.
Reduce heat to low. Add pumpkin and vegetable broth, stirring for another 5 minutes.
In your casserole dish, place bread cubes and pour over the veggie/pumpkin mix. Toss gently to coat and bake for 20 minutes. For a dryer stuffing, extend baking time.

Opt for whole wheat bread for a healthier touch. Plus, increasing veggies and reducing bread can be a way to compensate for the butter.
