Ingredients 📝

  • 400g (3 cups) frozen peas

  • 3 eggs

  • 120g (1 cup) all-purpose/plain flour

  • 1 tsp baking powder

  • 1 spring onion (scallion), chopped

  • 55g (⅓ cup) crumbled feta cheese

  • 2 tbsp chopped parsley

  • 3 tbsp olive oil

Instructions 👩‍🍳

  1. Boil peas for 2-3 minutes, drain and rinse under cold water.

  2. Blend eggs, spring onion, and half of the peas until combined.

  3. In a bowl, mix the blended pea mixture with remaining peas, feta, parsley, flour, and baking powder.

  4. In a skillet, heat 1 tbsp oil over medium heat. Scoop and flatten tablespoons of the mixture, frying each side for 2-3 minutes until golden and crispy.
