  • 6 large eggs, lightly beaten

  • 14.5-ounce can of pinto or black beans, rinsed and drained

  • 1 cup shredded cheddar cheese

  • ½ teaspoon cumin (optional)

  • 8 whole wheat fajita-size tortillas

  • Optional toppings: salsa, guacamole, or sour cream

Instructions 👩‍🍳

  1. Heat the butter or oil over medium heat in a skillet.

  2. Add eggs and let set for about 1 minute. Stir gently to allow uncooked eggs to flow underneath, cook until eggs are mostly set.

  3. Stir in beans and cheese, cook for 2 minutes until beans are warm and cheese is melted.

  4. Warm tortillas wrapped in a damp paper towel in the microwave for 1 minute.

  5. Place about ¼ cup of the filling in each tortilla, fold and roll up.
