Zest Up Dinner: Grilled Chicken Veggie-Avocado Salad

Ingredients:

Chicken Marinade:

  • Olive oil

  • Lemon juice

  • Low sodium soy sauce

  • Worcestershire sauce

  • Coconut or brown sugar

  • Garlic powder

  • Onion powder

  • Kosher salt

  • Pepper

  • Chicken breasts or thighs, boneless and skinless

Grilled Vegetables:

  • Eggplant, cut into rounds

  • Zucchini, cut lengthwise into flats

  • Red onion, cut into wedges

  • Corn on the cob, shucked

  • Avocados, halved and pitted

  • Olive oil

  • Kosher salt

The Rest of The Salad:

  • Cherry tomatoes or whole tomato cut into wedges

  • Romaine or baby gem lettuce

  • Citrus Herb Vinaigrette or your favorite store-bought vinaigrette

Instructions:

  1. Marinate the Chicken: Combine all the marinade ingredients in a bowl or bag, then add chicken and let it soak in for at least 30 minutes on the counter or up to 5 hours refrigerated.

  2. Prep the Vegetables: Place the veggies on a baking sheet, brush them with olive oil, and sprinkle with salt. Ensure all surfaces are coated.

  3. Grill Chicken and Vegetables: Preheat the grill to medium/high heat. Grill the chicken for 6-7 minutes per side, until firm, golden, or thermometer reads 160°F. Grill the veggies until they're golden and fork-tender. Let them cool.

  4. Assemble the Salad: Place the lettuce and tomatoes on a large platter. Chop the chicken and veggies into desired sized pieces, leaving the avocado halves whole. Top greens with your grilled goodness!

  5. Finish the Salad: Give it a good drizzle with your favorite vinaigrette. Voila! Your summery feast is ready.
