Easy & Nutritious Oatmeal Bars 🫐 🥕

I found an absolute winner that combines fun, taste, and nutrition all in one package - Easy Oatmeal Bars with blueberries and carrots!

And did I mention, they're totally friendly for our allergy-prone kiddos?

Perfect, isn't it? 😋

Ingredients 📝

  • ¾ cup quick or instant oats (or grind regular rolled oats for a finer texture)

  • ½ cup whole wheat flour (or all-purpose if you prefer)

  • ½ teaspoon baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ¼ cup melted coconut oil or butter

  • ¼ cup creamy unsweetened almond butter (or sub with sunflower seed butter)

  • ¼ cup maple syrup (Honey is a good alternative too, but not for under 1 year olds!)

  • 1 egg (optional)

  • ½ cup grated carrot

  • ½ cup blueberries (halve 'em if they're too large!)

Instructions 👩‍🍳

  1. Preheat the oven to 375 degrees F and line an 8x8-inch pan with parchment paper.

  2. Stir together all the ingredients in a bowl, keeping the blueberries for the last. Add in the optional egg if you prefer.

  3. Press the mixture into your prepared pan evenly.

  4. Bake for 24-26 minutes or until the edges are lightly golden brown and set.

  5. Cool fully before slicing.

Note 📌

  • Store in an airtight container for up to 5 days in the fridge or freeze for up to 3 months.

  • Remember, for gluten-free, use a cup-for-cup gluten-free flour mix.

  • Sunflower butter is your friend for a nut-free alternative.

  • For a cakier texture, go ahead and add that egg. Without it, you'll get a crisp cookie bar texture. It’s all about what you fancy!

  • Home-grated carrots give a finer texture than store-bought shredded ones.

  • Fresh blueberries work best for this recipe. Frozen ones might make the batter hard to press into the pan.

  • Cool fully before slicing to avoid a crumbly disaster.
