“I feel like my mother in law has more fun with my son than I do. I feel like some days my son and I have more challenges than they do. I know most of that is in my head. I also worry that I'm going to be a Zombie like my mom was from being exhausted from working. I'm working on being present for my son.”
You're doing an amazing job, Mama—it's clear how much you care about your son, and that self-awareness shows you're giving him your very best every day, even when it feels tough. Remember, the love you have for him shines through in all those little moments, and that’s what truly matters. - Danielle 😊

Blueberry Baked Oatmeal 🥣🫐
yummytoddlerfood
Today, we're ditching the hustle of morning stovetop stirring for a breakfast recipe that'll have your little ones beaming.
It's all about a make-ahead, belly-filling, family-friendly delight - Blueberry Baked Oatmeal! 🎉
Ingredients📝
1 teaspoon coconut oil
2 medium eggs
5 ounces canned coconut milk
⅓ cup honey (warmed slightly)
1 teaspoon vanilla extract
2 cups water
1 cup steel-cut oats
¼ cup shredded unsweetened coconut
¼ teaspoon salt
1 cup blueberries
Coconut not your thing? No worries, butter can stand in for the oil, regular milk can replace coconut milk, and simply add more oats instead of shredded coconut. Likewise, feel free to use rolled oats instead of steel-cut ones.
Instructions👩🍳
The Night Before:
Generously grease a 3-quart casserole or 9-inch square baking dish with coconut oil.
Whisk together the eggs, coconut milk, honey, and vanilla until smooth. Stir in the 2 cups of water, steel-cut oats, and salt.
Pour this mix into your dish, gently press in those blueberries on top, and cover up. Pop it in the fridge overnight for some sweet dreams.

In the Morning:
4. Preheat your oven to 350°F. Uncover the oatmeal and bake for 35—40 minutes or until it's set and calling your name in the middle.
Drizzle with some extra honey, sprinkle with coconut, and serve hot. Maybe add a little extra milk if you're feeling it!
Note📌
The leftovers (if any!) are great for up to 5 days in the fridge.
Reheat them as needed or just enjoy them cold. Honey can be swapped out for maple syrup if you prefer.
Fresh or frozen blueberries both work like a charm.
You can use canned coconut milk for an extra punch of flavor, or swap in regular milk or another non-dairy milk if that's more your jam.
Wrap Up
A delicious breakfast that frees up your morning and keeps everyone satisfied.
Now, you can savor your coffee, tend to your little ones, or simply take a moment for yourself. Happy baking!
